Spiced Apple Cake

This cake always goes down well in our house, to the point I have to hide it!

Traditional cakes call for wheat flour and plenty of sugar, with a diabetic in the house and a teenager neither of these are good so I get busy with alternative ways to offer a pudding.

Ingredients

  • 2 ½ cups (250 g) ground almonds
  • 4 large eggs
  • ¼ cup (55 g) softened unsalted butter
  • 1 large eating apple
  • ⅓ cup (5 tablespoons) honey
  • 2 teaspoons ground cinnamon
  • 1 teaspoons ground ginger
  • ¼ teaspoon ground cloves
  • 1 teaspoon baking powder
  • 2 teaspoons lemon juice

Step by Step Instructions

Step 1

Preheat the oven to 320°/160°/Gas mark 3, grease and line a 7” round spring form tin.

Step 2

Begin by grating half the apple and slice the other half, sprinkle with the lemon juice to prevent browning.

Step 3

In a large bowl whisk the eggs until fluffy then add the ground almonds, honey, butter, spices and combine well, add the baking powder and the grated apple, stir through and pour the batter into the prepared tin.

Step 4

Finally take the sliced apple and arrange in a spiral shape radiating outwards until all used.
Bake in the centre of the oven for 45-50 minutes. Leave to stand in the tin for 5 minutes before transferring onto a wire rack to cool.

Step 5

Serve drizzled with double cream, or pop into a lunch box.

Cinnamon has been proven to stimulate insulin and helps the body to process sugars more effectively. This cake has the sweetness from the honey a natural sugar, but it is distributed throughout and the addition of full fat cream helps to slow down the absorption in the bloodstream.
