Some 15 or more years ago my hubby was diagnosed with Type 2 Diabetes. We were handed the diet sheet by the doctor and told to pursue a low fat, high carb diet, this we did yet his blood sugars were still rising higher than the mercury in the Sahara.
Salvation came one evening when I cooked a full British fry up for dinner; bacon, eggs, sausage and fried mushrooms. It was low carb and high in fat, how wicked, how utterly delicious, how unexpectedly healthy. This plate full of blacklisted grub totally contradicted the advice proffered by the doctor yet this meal did not need a full leg full of insulin.
Needless to say we threw out the diet sheets, now we eat a diet rich in protein and healthy fats and low in starchy carbohydrates.
