Ingredients

1 ½ pound (700 g) ground (minced) beef & ground (minced) pork (50/50)

10-12 rashers streaky bacon
-
½ large onion finely chopped
-
½ tablespoon tomato puree

1 teaspoon paprika
-
½ teaspoon turmeric
-
2 large eggs
-
3 tablespoons ground almonds
-
1 tablespoon psyllium husk
-
1 teaspoon ground flax seed
-
2 teaspoons dried thyme
-
1 teaspoon oregano
-
Salt & pepper
Step by Step Instructions
Step 1
Preheat the oven to 320°/160°/Gas mark 3
Step 2
Grease a small loaf tin (4×9 inches) and begin lining the loaf tin with the streaky bacon laying the rashers down the long sides and across the base, cut the remaining rashers and in half and line vertically at the short ends, over lapping the base slightly
Step 3
In a large mixing bowl, lightly beat the eggs; add the seasonings and the tomato purée. Next add the ground meat, chopped onion, ground almonds, psyllium husk and ground flax seed. Get stuck in with both hands and mix well.
Step 4
Carefully push the mixture into the load tin, making sure you press into the corners, fold any bacon edges over. Pop a sprig of fresh thyme on the top and cover with foil.
Step 5
Bake for 40 minutes, then remove the foil and bake for a further 15 minutes, remove from the oven and leave to rest for 5 minutes in the tin.
Step 6
Pour off any juices and (use in gravy) place a serving dish over the top and carefully flip over. Serve with plenty of green vegetables.
Any leftovers can be chilled and popped into a lunch box.
