Almond Bread with Chia Seeds

I make this on a regular basis, it is great for packed lunches and will toast and brown beautifully – perfect for soldiers and dunking into runny eggs.

Ingredients

  • 150 g ground almonds
  • 100 g cream cheese
  • 1 table spoon psyllium husk
  • 1 table spoon chia seeds
  • 1 table spoon flax seeds
  • 2 teaspoons sesame seeds
  • 4 large eggs
  • 1 teaspoon baking powder
  • Pinch of sea salt

Step by Step Instructions

Step 1

Pre-heat the oven to 350°/180°/Gas mark 4, grease and line a small loaf tin.

Step 2

In a large bowl beat the eggs until fluffy, then stir in the cream cheese.

Step 3

Add the ground almonds, seeds and psyllium husk, with a pinch of salt before finally adding the baking powder; this will form a stiff batter.

Step 4

Pour into the tin and place in the bottom of the oven for around 30 -35 minutes.

Step 5

Leave to cool in the tin for 20 minutes to cool.

Chia seeds pack a powerful nutritional punch as they are high in calcium, iron and magnesium. Magnesium helps to metabolize carbohydrates and fats and also helps to repair muscles.

Flax seeds are high in omega 3 and sesame seeds are really high in protein.
